Since 1818, the Caviarchi family has been dedicated to delivering a caviar experience unparalleled in quality and flavor. Inspired by our ancestors pioneering spirit and wrapped in family tradition, each jar of Caviarchi promises exceptionally curated sturgeon roe perfection.
Two centuries ago caviar was our family’s way of life. Today, nothing has changed. We are the longest running single family owned caviar company. We even still use our original family recipe passed down through two centuries and five generations. Caviarchi is more than just a caviar; it is a passion, a legacy, a tradition, a language that we speak, and the way our family shows the world who we are.
Our family is obsessed with perfection of the finished product, and it starts with the sturgeon.
All of our Caviarchi sturgeon are patiently grown in natural waters, using state of the art re-filtered water systems that mimic the exact water conditions of the sturgeons environmental habitats. Our farms are ISO and FDA certified for maintaining the highest level of production practices. We have the utmost respect for our species and the sea from which they come, so our farms are a truly sustainable operation that keep our sturgeon and the environment happy and healthy.
At Caviarchi we employ humane extraction processes, ensuring none of the sturgeon are killed or harmed during the extraction of the roe. Every harvest is done according to the females natural cycle. We use absolutely no stunning, no sedation, no carbon gas, and no brute force of any kind to the sturgeon when harvesting roe. An ultrasound is performed on one sturgeon at a time, and once their cycle is confirmed to be complete we use a massaging technique to coax the eggs out naturally and painlessly. Once our caviar is packed it is never re-opened, re-processed, or tampered with, which in turn guarantees a stamp of approval by our team when sealed. Caviarchi is harvested, produced, shipped and sold by a direct single chain from our farms to our consumers.
Caviarchi is the oldest and longest lasting single family owned premium caviar company, and the exact same family recipe has been passed down and used for over two centuries. Every jar of Cavairchi is harvested, produced, packaged, and sealed at the farms and won’t be opened until ready to be served and savored by the consumer. Because our sturgeon is free to grow at its own pace and roe is harvested naturally, Caviarchi is sold in limited quantities and never over-produced. We believe caviar is meant to be enjoyed fresh, so we will never mass-produce and leave our product sitting on a shelf or collecting dust in storage.
Our family’s original recipe has been passed down for over two centuries. This is because we want to enhance the natural flavors of each species. We use a specific salt and water cycling ratio to let these beautiful flavors speak for themselves. The only thing uniform about our caviar is the perfectly shaped roe, each bursting with the essence of the sea.
At Caviarchi we are proud to offer three different types of caviar. From novice to expert, and from simple palates to bold adventurous eaters, each individual’s preference is satisfied.
Sterlet offers mild salinity reminiscent of a simpler time, when food was consumed in its purest form and enjoyed leisurely with loved ones. The subtle smooth flavor might be missed if not savored, and will linger in your memory like a moment long treasured.
Bester is for the Goldilocks of palates, with a not-too-salty, not-too-bold, yet nutty, buttery, and perfectly balanced bite. Bester is a go-to for many with good reason, and ours is no exception. We suggest you reach for it those nights when you just don’t want to settle for anything short of amazing.
Osetra often needs no introduction; it is easily the most sought-after, talked about, and desired of the sturgeon species. Osetra is bold, complex, golden. Succulent spheres of roe are barely sufficient to contain their own flavor. We like to think of it as a gift from the ocean, meant to be shared from our family to yours.

Caviar became a passion and a way of life for our family starting in 1818 with Romanoff Caviarchi. His dedication to his craft and the involvement of his sons was well known. Fatiloff Caviarchi was known as somewhat of a sturgeon whisperer, and instead of mass fishing and killing sturgeon in the hopes of finding eggs inside, he pioneered a series of nets to be able to catch the sturgeon in its perfect form from the water. He would reach into the Caspian Sea with his bare hands and feel the belly and underside of the sturgeon. When he felt that a female was full of mature eggs, they would only take these select fish, letting the younger females and male sturgeon go. This method of selection used by Fatiloff and his brothers and father earned them the surname “Caviar-Chi” meaning “caviar nobleman.” Together they created a salt ratio to preserve the roe they collected, and soon their caviar was being asked for by name based on its high quality and unique flavor.
Today we are inspired by our ancestors pioneering spirit and deep respect for sturgeon. Our extraction processes and locations have been updated to fit an ever-changing market, and we have pioneered our own humane techniques to further protect all sturgeon species. The more things change the more we stay the same. The original recipe and salt ratio are still used to preserve our roe and our family tradition. We are dedicated to honoring our legacy and hope to continue to pass it down for another 200 years.
